Presque la totalit\u00e9 de la population fran\u00e7aise est expos\u00e9e.<\/p>\n<p>La contamination des aliments, de l\u2019eau et du sol par les m\u00e9taux lourds peut \u00eatre induite par plusieurs facteurs\u00a0:<br \/>\n&#8211; les activit\u00e9s humaines responsables de la pr\u00e9sence de r\u00e9sidus toxiques (utilisation des pesticides, production des d\u00e9chets domestiques avec des compos\u00e9s m\u00e9talliques, \u00e9manation des compos\u00e9s chimiques, activit\u00e9 industrielle\u00a0\u2026)<br \/>\n&#8211; la propagation naturelle des \u00e9l\u00e9ments chimiques pr\u00e9sents dans l\u2019environnement.<\/p>\n<p>L\u2019accumulation de m\u00e9taux lourds dans un organisme repr\u00e9sente un risque \u00e9lev\u00e9 pour la sant\u00e9. Cela peut r\u00e9sulter de deux situations: <strong><br \/>\n<\/strong>-Exposition \u00e0 une dose \u00e9lev\u00e9e (toxicit\u00e9 aigu\u00eb)\u00a0;<\/p>\n<p>-Exposition prolong\u00e9e \u00e0 des doses plus faibles (accumulation dans les tissus et toxicit\u00e9 chronique)<\/p>\n<p>Les m\u00e9taux lourds les plus diffus\u00e9s sont le mercure, l\u2019arsenic, le chrome (notamment dans les poissons), le cadmium (les algues, dans les c\u00e9r\u00e9ales), cuivre (dans les l\u00e9gumes par exemple).<\/p>\n<p>En consid\u00e9rant que la contamination alimentaire pose un v\u00e9ritable probl\u00e8me de <strong>sant\u00e9 publique<\/strong>, l\u2019Union Europ\u00e9enne a r\u00e9dig\u00e9 le\u00a0<a href=\"https:\/\/eur-lex.europa.eu\/LexUriServ\/LexUriServ.do?uri=OJ:L:2006:364:0005:0024:FR:PDF\" target=\"_blank\" rel=\"noopener\">r\u00e8glement (CE) 1881\/2006<\/a>, qui\u00a0\u00e9tablit des niveaux maximaux pour certains contaminants dans les denr\u00e9es alimentaires, en particulier pour le plomb, le cadmium, le mercure et l\u2019arsenic.
